Toast to Toast To

It is no secret that creating - in every essence of the verb - is my favorite way to fill my cup. On days when admin work piles up and studio time falls to the wayside, creativity still finds its way into my daily routine by way of cooking - but more recently and specifically, through my morning toast.

Here's what I've been whipping up in the kitchen - and now you can too!

Tomato Toast

- Slice of toasted, thick cut sourdough (farmer's market bread is my favorite!)

- Spread of cottage cheese (the full fat one in the red carton from Trader Joe's is my fav)

- Your choice of sliced tomatoes

thinly slice your tomato (if you're using one big one), use halved tomatoes (if they are cherry sized), or a

sprinkling of full sized tomatoes (if you're using miniature! my favorite brand is 'Sprinkles' from

Trader Joe's. They have the most satisfying pop with every bite)

- Squeeze of lemon, to taste

- Drizzle of EVOO

- Dash of chili flakes (or a drizzle of crunchy chili oil!)

- Sprinkling of flaky sea salt

- Peppering of ~pepper~

et voilà!

not a cottage cheese fan? Try to Tomato Toast recipe by swapping out the cottage cheese for slices of fresh mozzarella (pictured above)!
